Our cake design was inspired by a cake that we saw that cake was full of cherry blossom and was very summery. We didn’t want a carbon copy of that cake, we wanted something that was unique for us and our winter woodland themed wedding. We wanted our cake to reflect winter so the tree had to be 3D, it had to have very few leaves, with snow or frost, but lots of moss and winter foliage, we also knew that we wanted royal icing on one tier, which we knew could look odd, because royal icing looks different to regal (or fondant) icing and not every cake maker has the skill to do royal icing.
From the moment we met Chelsea, she was enthusiastic and keen to hear more about our idea. She came to visit us at home with some cake samples whilst we discussed everything about our wedding. She wasn’t at all fazed when we gave her a 10-page PowerPoint presentation on what we found inspirational and what sort of things we absolutely didn’t like. We told her all about the types of décor and flowers planned, the dresses, the invitations and unbeknownst to us she was really taking everything in, including the things in our home that we liked.
When she submitted her design to us, not only was it the most creative of all the cake makers we had seen, she had ensured that the tier with royal icing was the forest floor so that it would look deliberately different to the rest of the cake, but she had also included a dummy layer, not only for height, but it concealed LED lights which we have a lot of in our home and which we planned to have lots of at our wedding – it was truly inspired and made us realise that she really had listed to us and cared about getting our cake right just for us.
We also wanted some egg free cupcakes in our flavours for some guests and Chelsea just took this request in her stride. She assured us that this wasn’t a problem and all the flavours we wanted could be achieved without egg.
As well as the cake, we also wanted cookies in the shapes of gingerbread brides and grooms which would be served after our outdoor wedding ceremony with hot chocolate (we got married outdoors in January). Again, she knew just how much decoration we wanted on them and understood exactly how big we wanted them and that we didn’t want them wrapped because we wanted people to eat them rather than save them as keepsakes.
About 4 months before the wedding, we met again to have another cake tasting to finalise our flavours (we had 4 different flavours) and we asked her if she could bake another large cake for us before the wedding to celebrate the birthdays of 9 of our guests who had birthdays in the same month as our wedding and who were attending an informal pre-wedding party 2 days before the wedding.
Everyone was blown away by the design of the birthday cake which celebrated the birthdays of children and adults, both male and female. They kept saying how delicious the cake was.
Our wedding cake was better than Chelsea had described it. It was tall and 3D and shimmered as if it was covered in frost. The base of it looked like a forest floor and the middle of it glowed where the lights shone out. The photos really don’t do it any justice. The cake was displayed on a crooked tree stump cake stand that Chelsea provided and that stood on a table that our florist decorated with moss, ivy, twigs etc to look like a forest floor and she added fairly lights to give it a touch of magic and to reflect the glow of the tree. The whole cake (and table) was breath-taking and it sat out in the room next to the sweetheart table where everyone could look at it for hours before the cake was cut, there was no way we were hiding that cake away in a corner.
All of our guests kept saying they had never seen a cake like it and anyone who has seen the photos since has said the same thing. The design of the cake was truly unique.
Everyone loved the flavours of the cake, with the pistachio and cardamom being the one that everyone spoke about the most because they had never had that flavour combination in a cake before, but that was closely followed by the chocolate & peanut butter which we knew was going to be a big hit. And our egg free guests were so grateful that they had been catered for too.
The only problem with the gingerbread brides and grooms, was that even though we order more than we needed, everyone wanted more of them! They were delicious and perfect with hot chocolate on a chilly, but sunny, January day.
Chelsea really takes a personal interest in who you are and what makes you click, she’s interested in your day and we felt that she really cared about us. She was always patient and good humoured, even when we said hello to her at every wedding fair she attended. She was a real team player and was happy to meet with other suppliers to make sure that we were all on the same page, even if we weren’t talking about cake.
