Fitting well with next season's relaxed country style for weddings, bare wedding cakes, or rather "Naked Cakes" were a huge trend at this season's National Wedding Shows. Composed of layered madeira sponge and buttercream, decorated with fresh berries or flowers and dusted with sugar - this style of wedding cake decorations is not only visually stunning, but unique from the "traditional" wedding cake.

Looks simple to make? Don't be fooled; without icing to hide any imperfections the bake and unfrosted wedding cake must be totally even, the layers cut perfectly straight and even, with the buttercream spread casually "just so." Without a layer of icing preventing the tiers from drying out, this cake ideally needs to be decorated on the morning of the wedding. Replacing the buttercream with fresh whipped cream is not recommended as it can only be out of the fridge and on display for a short time and the cream can't support the weight of the tiers above.
